Our all time favorite breakfast while we are camping is waffles (bacon and eggs is a close 2nd). They are quick so you can get out the door in the morning and start exploring. They are easy because you doesn’t love that. And they are delicious!

MELT BUTTER

When you’re ready to start baking your delicious waffles, melt 4 Tbsp of butter in a microwave or in a pan on the stove top. Pour butter into a large bowl.

ADD EGGS AND BUTTERMILK

Add 2 eggs and 2 cups of buttermilk to your bowl. Stir until everything is well blended.

ADD DRY INGREDIENTS

For the dry ingredients, you’ll need to sift 2 cups flour, 4 tsp baking powder, 1 tsp baking soda, and 1 tsp salt. I like to sift all of my dry ingredients into a ziploc bag before we go camping or at the beginning of the week when I’m meal prepping during a long road trip. A little prepping makes this recipe that much easier.

Stir everything until well blended. You may need to add just a little bit of the dry ingredients at a time. The batter should be a little lumpy.

BAKE ON WAFFLE IRON

The easiest part! Scoop 2 spoonfuls of batter onto the waffle iron and wait until it’s ready. Most irons have a red light indicator when your waffle is done. If yours doesn’t have this, I’d check your waffle every 30 seconds or so to make sure it doesn’t burn.

Continue adding the batter to the waffle iron until you’ve used it all. 2 scoops at a time.

This recipe can easily be halved, doubled, tripled, depending on your party size.
